We were fortunate to experience a very unique evening at the restaurant of Hotel Casa Chameleon. We enjoyed a fabulous local dinner prepared by Pabro Sanchez and his culinary team on our last night in Costa Rica. We were a group of 5 women on a wellness retreat and Pabro was our naturalist/guide on a hike! One of our group had heard from a collegue in Boston about an amazing local chef named Pabro; and once we connected the dots, we realized that our guide WAS this young and multi-talented man! Therefore, Pabro made a reserved a special table for us outside; and I enjoyed a Costa Rican slow-cooked pork dinner accompanied by a white sauce of puréed white beans and hearts of palm. Best pork I've ever eaten. Others chose the local fish which was cooked to perfection. The staff and our waiter could not have been nicer and more accommodating. FYI: The restaurant has only recently been open to non-hotel guests. Hotel itself is a highly acclaimed honeymoon destination. Gorgeous views, quiet, intimate.

Room Tip: Honeymoon spot close to all activities: ziplining, paddle surfing, beaches, surfing, hiking, horseback riding

Would anyone go 2,000 miles to return to a favorite restaurant? Well, yes, I admit I did, although it's not quite as simple as that.

Others have written about the exquisite beauty, the wonderful sense of peace, privacy and tranquility, the amazing villas, etc. It's all true, and more. I want to focus on two things: the food served in Casa Chameleon's own restaurant and the establishment's staff.

First, the food.

When you spend months planning a return to Casa Chameleon, dreaming of what Executive Chef Pabro Sanchez and his staff will present at dinner, there is obviously something quite extraordinary about dining here. This was our second visit to Casa Chameleon, and we quickly learned on our initial visit to simply ask for the catch of the day and be prepared for some of the most amazing food ever set before us. We love the pride Chef Pabro takes in using local ingredients, seafood caught that very day, prepared and presented with respect for the environment and sustainability and with loving affection and attention to detail. I am retired now, but I have traveled the world and dined on all manner of cuisines in restaurants at all price points. I don't know where else one would go to enjoy food of this quality. One can even fall in love with Chef Jose Luis's breakfasts, where the presentation makes you want to take a picture to capture the moment, the fruit is like nothing you ever experienced and beans and rice is suddenly a gourmet dish.

Chefs Pabro and Jose Luis will send you home dreaming of how good food can be in the hands of an artist.

Second, the staff.

I'm guessing that there are at least 20 personnel on site at Casa Chameleon. With little effort, you can know them all by name, and they will know you, before you leave. The only exception may be the housekeeping staff, who smile and wave on their way into work while you are enjoying one of Jose Luis's famous breakfasts and are never seen again. Somehow, they figure out your daily routine and service your villa to perfection without ever intruding.

Erika, you are something special. You make it all work. Cesar, your enthusiasm for your job and your desire to satisfy every wish of your guests was obvious. Someday, you will manage the place. Andrea, you were a pleasure every moment. Hector, I thank you for your assistance in managing several requests for service, and always with a Casa Chameleon smile.

A third time? We'll see, but our second visit was, as my wife said, a return to paradise.

Casa Chameleon was our last stop on our Cost Rica trip, and what a finish. The other photos of the hotel do justice to the place, check them out - but there is no way they can convey the feeling and ambience of actually being there. Nothing negative can be said.

The village of Mal Pais 5 minutes away by car/motorcycle is bustling with life and both the restaurants and bars offer a wide selection of food and entertainment. Mind you, Mail Pais this is more of a surfers spot so don't expect valet parking and landscaped gardens. The main road is dirt only, but this only adds to the charm, unless it hasn't rained for 2 months, in which case the cars and motorcycles tend to swirl up some dust.

Beach dining and dancing, surfing and miles of sandy beaches. And there is The Bakery - serving fantastic breakfast croissants and freshly baked bread, coffees, fruit cocktails and ice cream. Enter the place and you are instantly transferred to Paris, food wise that is....

Our experience at Casa Chameleon was fantastic! We spent the best 3 nights of our honeymoon there. Our room had amazing views, romantic privacy--our own private pool!--and the hotel is in an awesome location. Amazingly helpful and nice staff!

This was our second trip to Casa Chameleon and our 7 day stay was divided between Villa Sol and Villa Estrella. The villas, each with a private pool, are both wonderful. I loved starting each morning with coffee poolside, watching the birds. I would then swim in the main pool, burning a few calories, before a leisurely full breakfast.
We had the Romance package that included a couples massage in the villa (heaven), a rental car (we extended it to 5 days), and a tour of Cabo Blanco (a 4 hr hike but fabulous).
For dinners, we ordered catch of the day and were treated daily to Pabro's inspired preparations. There is no reason to leave the property for dinner; just eat lunches out to visit other restaurants; you won't find better dinners.
I hope the management will also promote nearby birding/wildlife tours like the one we took with Pabro. It was a great experience (and better suited to an older couple like us).
This is not the place to stay if you want active nightlife (not counting the geckos) or TV. Also, the steps between villa and front desk/restaurant/bar are significant if you have mobility issues.
The staff is extremely attentive, personable and helpful; they really try to meet your preferences.
After 31 years of marriage, we are not exactly honeymooners, but we loved the beauty, privacy, serenity and personal service the we again found here.

Room Tip: Villa Sol has the fewest steps and a great pool; you do hear an occasional car from the adjacent lane, but it's not a problem.
