My wife and I just moved to Hudson so we're making our way around to all the local eateries, and there are a lot. For breakfast and a good cup of coffee Cafe 641 is the best in town. I should mention they also serve lunch which I've not tried yet. The omelette's are great and pastry is home made.
A concern was it would be cold in the winter because the door opens right into the restaurant but to date it hasn't been a real problem. The place feels comfortable like and an old pair of shoes. There's a large mural of a Hudson Machine Shop, original artwork lining the walls and it has a comfortable seating area with old books to look through or to do some work using their free wifi.
There is a new manager and he seems to be on top of things. If you're looking for something a little different check this place out!
