I imagine that the Medford Square area is a difficult place to open a sushi restaurant. With established competition like Sei Bar (excellent sit-down service, complete with froofy adult beverages) and Ebisuya (inexpensive but exceptionally good take-out), one would really need to keep on top of food quality and service. Nijiya does an admirable job with both.
First off, I'd like to differentiate between an all-you-can-eat sushi buffet and an all-you-can-order restaurant. Nijiya is the latter. You sit down, choose what you'd like from a menu, and the sushi is prepared to order. If you decide you want more, you can order more. The food isn't sitting out all day as sometimes happens at a buffet.
The fish was very fresh, and cut from the more choice parts. Their chef used a decent ratio of fish to rice, which is often a place where all-you-can-eat restaurants skimp. The rice itself was good enough that I commented on it to our server. Finally, they serve escolar,* listed as "white tuna" on the menu, which is one of my favorites (second only to salmon).
The service was excellent. Our server was very polite and attentive without being intrusive. I was also impressed with the speed at which our food arrived---there were four of us, so it wasn't a small amount.
I will admit that the non-sushi dishes we tried were a bit lackluster. Not bad, per se; they just weren't particularly amazing. No stars have been docked because, truth be told, it matters little to me when the sushi itself is as good as Nijiya's (given that the restaurant advertises sushi first and foremost).
To conclude, I really enjoyed our meal at Nijiya. The food was delicious and the service was pleasant and efficient. I think they fill a niche between Sei Bar and Ebisuya very nicely, and I'll happily eat there again.
*A word of warning on escolar. It's really amazingly delicious, but it contains an indigestible wax ester which can have some temporary unpleasant effects if more than 6 ounces (about 10 - 12 nigiri) is consumed. Try it. It's incredibly good. But just don't overdo it.
