We live in the Pacific Northwest, home of Vietnamese American fusion, and have spent more than 6 months in Vietnam over the last 10 years. N13’s Pho is as good as it gets. It has its own character, really wonderful broth, rib eye steak adds great flavor and texture, and the vegetables were as fresh and beautiful as you find anywhere in Vietnam. Also had very good pot stickers and Szechuan beef...completely authentic. It will be a regular place for us when we are in Hamilton.

We had the dumplings, ok but very little filling, and two stir fry bowls. One was burnt the other just tasted like salt.
Looks to be mainly a take out joint, as there are only two small tables.

Dear Whritner:

Our apologies for the experience you had at N13.

The posticker/dumplings are fried (and we offer pan seared as well). Frying causes the shell to expand much more than pan sear, and thus it can seem like there is less filling. In fact all our potstickers are full of filling when they are hand made in the store.

Our apologies for a dish that was overcooked, and the other that was too salty for your taste. In the summer we are low on staff and it is possible if you were visiting in a rush your dish was not prepared properly. Our team tries hard to be consistent, and I will share your comments with them.

We are bringing new recipes online mid-August, as we are broadening the flavor portfolio from soy sauce-based dishes.

We are a small shop, with as you mentioned, with limited seating in side and tables in our alley. In the months ahead we will be adding more seating in our basement space to accommodate larger groups.

Again, we're sorry you were disappointed with your visit, and hope you will visit us again. Please feel free to bring this response and enjoy a complementary entree on us.

Sincerely,

Scott Williams
General Manger

The food quality has gone up hugely compared to two other times I've tried N13. We went once when they first opened (tasteless), another time a few months later (greasy noodles, not very good), and the current offering much, much better. Infinitely better, given how poor the food was previously, in my opinion. Still, there's a long ways to go to make the food recommendably good.

The vegetarian bun was pretty good, but the tofu was a bit too dry (also true for the noodle dishes). The noodle dishes (pad see ew, sesame ramen) were ok. For both of them it seemed like the noodles had been sitting around a little while. None of these were bad, but they weren't spectacular by any stretch. Passable, but not really beyond that (how many ways can one say mediocre?)

Thank you for sharing your thoughts, we have been working hard to refine our products, improve procedures, and continue to focus on our food better and better. We value your feed back and assure you it is looked at carefully. We've adjusted some of our procedures for the prep of our noodles a bit so that they hit the correct moisture content before cooking. Lots of little adjustments in our oasis in CNY, however we are very excited about some new products and offerings to bring online this summer for the next school year. Please check us out again! Early dinner with my wife and daughter. Went into town and found parking directly across the street by the book store. Asked for recommendations and received a dish that fit each of our flavor palates (light / Ramen Noodle, medium / Low Mein and spicy / Szechuan). We also had the Smoke Shop Steam Buns. All were fresh, flavorful and spiced to our individual liking.

The restaurant has limited seating, but we were able to make a table for three in one of the front window spaces.

Excellent food, great service and good variety.

I travel by car and often have a hard time finding decent food that is served fast (as opposed to fast food ) the food at N13 is freshly prepared and very tasty. Quantities are large and the quality is great. It is reasonably healthy depending on your choices the spices they use make the food deliciously different. Decor and food are not overly-in-your-face "ethnic" with fake gold dragons and unreadable menus of prepared food kept in the freezer. There's nothing wrong with that if you are specializing in a single type of cuisine from a specific country (well, maybe the pre-prepared frozen meals aren't ok). N13 isn't doing that. It is serving good East Asian food, fresh, in a clean, functional atmosphere. Good spot for lunch or a quick bite before or after the movies that are playing next door. I liked it.
