We had an extraordinary experience at the Hudson Valley Rose. We stayed for two nights in November 2019. The place is beautifully appointed, from the way the rustic, tasteful rooms are furnished to the elegant and luxurious bathrooms. The beds were also amazing - a super comfortable mattress, and oh my goodness the sheets were so soft we wanted to take them home with us.
It is also hard to explain just how good the food is. The owners cook it themselves, and from the fluffy homemade frittata with local eggs and the French press coffee to the creative, delicious porridges and mind-blowing shakshuka, we were in heaven. They could open a brunch place alone and still draw us up from the city.
The location is also great. First, it was a 1.5 hour drive from the UWS. We took short drives each day, once to see the art at DIA:Beacon, another to do the “Gertrude’s Nose” hike in Minnewasaka State Park. We also considered Storm King and the Culinary Institute of America, both of which are nearby. The place itself is situated on 60+ acres, which meant we got lots of solitude, quiet, and natural beauty just out the bedroom window.
In short, we fell in love and will be back soon.
