Sergio makes the best pizza I've had - and he does it deep in the Nicaraguan forest near San Juan del Sur. His restaurant is more like a backyard party where you are the guests and he provides the food, drink, music, and fun. He makes pizza two days each week, and you must make reservations in advance so he can procure ingredients. It's a unique and fun experience and I will visit again the next time I am in San Juan del Sur. "Highly" recommended :)
