We stopped by on a whim while in Galveston. The exterior decor is nicely done, but inside it’s clear this place was once a Waffle House. They did a nice job of updating it with typical hipster decor, but it still feels like a homey diner. The waitresses are very nice and parking behind the nearby motel is plentiful.
There’s lots on the menu but we decided on shrimp poboys since it was lunchtime. The food came quickly and the sandwiches were HUGE. The shrimp were gigantic and nicely spiced with Tabasco. Pickles lettuce and a smattering of mayo made for a light but filling sandwich. Props for the soft French roll which made everything easy to digest.
I’d definitely recommend stopping by Gumbo Diner.
