Blaze Pizza is a fairly new (five years old) pizza franchise. We tried a new one on Pratt Street (actually, just off Pratt) in Baltimore, across from the National Aquarium. Here's the deal at Blaze: you get to build your own 11-inch pizza (or order one of their signature pies) along a line, ala Subway. Then you pay for it while the Blaze cooks "blaze" in an oven for about four minutes. It's the fastest pizza you'll ever eat, and one of the fastest-growing franchises. The dozens of toppings makes for great variety. Some toppings are better than other, but anyone who can't come up with a pizza they don't like isn't trying. The pizzas are brick oven class, meaning a very thing crust that's baked fast with maybe just a little charring. They also have some bottled drinks, a fountain for soft dranks, some salads and stuff, but this place is about the fast pizzas. The Pratt Street location was fine. It offered some nice people-watching opportunities. Blaze's "motif" is fast and loud, so be prepared for some high-decibel music in the background. Another Blazing fact: LeBron James is an investor/franchisee. Didn't see him in the Baltimore Blaze, but the manager was friendly and the staff was ... well, fast.
