We were bowled over by Chef Richard's renditions of traditional Singaporean street food. Highly recommended are his Char Kway Teow, Nasi Lemak and Roti Canai. CKT is a rice noodle dish in a sweet black sauce fried to perfection with "wok hei" (literally pan flavour) and stuffed so generously with ingredients that the noodles were hard to find! Nasi Lemak is a fragrant coconut rice dish with traditional sides of peanuts, anchovies, fried egg and cucumber, accompanied by sambal chilli and achar (pickles). Roti Canai (aka Roti Prata) is a fried flatbread eaten with curry. Each dish is meticulously made from scratch and presented in just the way that every Singaporean would instantly recognise as the real deal (see pictures)! What's more amazing is that Richard hails not from Singapore but Sri Lanka, and he researches all his dishes and takes feedback seriously to ensure that his cooking is as close to the original recipes as possible. The dishes that I've reviewed are certainly the best I've tasted outside of Singapore, and I've been around a little. He has quite an extensive menu of other Asian dishes as well (including his native Sri Lanka, Thai and Chinese) which we look forward to trying at our next visit.
