These have been built by the peasants since the Middle Ages using local stones extracted from the soil while working the land. Today they still have an important role for the hydrogeological stability of the territory. Scattered in the woods around Filignano are dozens of ancient shelters named Tholos. These are stone huts built with dry walls, of conic shape culminating in beautiful vaults roofs. The building technique is extremely old. The traditional cuisine was a simple one where, besides pasta – obviously homemade- the main other dishes were polenta (boiled cornmeal), pulses and vegetables.
